Full recipe:
Ingredients:
-
4 boneless, skinless chicken breasts
-
1/2 cup all-purpose flour
-
Salt and pepper to taste
-
2 tablespoons olive oil
-
1/4 cup unsalted butter
-
8 ounces cremini or white mushrooms, sliced
-
3/4 cup Marsala wine
-
1/2 cup chicken broth
-
1 tablespoon chopped fresh parsley (optional)
Directions:
-
Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
-
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
-
Add the chicken breasts to the skillet and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
-
In the same skillet, melt the remaining butter over medium heat. Add the mushrooms and cook for 5 minutes, or until softened.
-
Pour in the Marsala wine, scraping up any brown bits from the bottom of the pan. Allow the wine to simmer for 3-4 minutes to reduce slightly.
-
Add the chicken broth and cook for another 2 minutes, allowing the sauce to thicken.
-
Return the chicken to the skillet and simmer for 5-7 minutes, spooning the sauce over the chicken until well-coated and the chicken is heated through.
-
Garnish with fresh parsley and serve hot.
