Full recipe:
Ingredients:
-
6 ounces semi-sweet chocolate, chopped
-
2 tablespoons unsalted butter
-
3 large eggs, separated
-
1/4 cup granulated sugar
-
1/2 teaspoon vanilla extract
-
1/4 teaspoon salt
-
Powdered sugar, for dusting (optional)
Directions:
-
Preheat the oven to 375°F (190°C). Butter two 6-ounce ramekins and lightly dust them with granulated sugar, tapping out the excess.
-
In a heatproof bowl, melt the semi-sweet chocolate and butter over a pot of simmering water (double boiler method), stirring occasionally. Once melted and smooth, remove from heat.
-
Allow the chocolate mixture to cool slightly before whisking in the egg yolks, one at a time. Add the vanilla extract and salt, mixing until smooth.
-
In a separate bowl, beat the egg whites with an electric mixer on high speed until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form.
-
Gently fold a third of the beaten egg whites into the chocolate mixture to lighten it. Then fold in the remaining egg whites until just combined, being careful not to deflate the batter.
-
Divide the soufflé mixture evenly between the prepared ramekins. Place the ramekins on a baking sheet and bake for 18-20 minutes, or until the soufflés have puffed up and the tops are set but slightly jiggly.
-
Serve immediately, dusted with powdered sugar if desired.
