2 medium carrots, peeled and diced
-
2 celery stalks, diced
-
1 teaspoon dried basil
-
1 teaspoon dried oregano
-
1/2 teaspoon crushed red pepper flakes (optional)

4 cups chicken broth
-
1 can (14.5 oz) diced tomatoes
-
1 cup heavy cream
-
Salt and pepper to taste

Fresh parsley, chopped (for garnish)
Directions:

In a large pot, heat olive oil over medium heat. Add ground chicken, breaking it up as it cooks. Cook for about 5-7 minutes until browned.
-
Add diced onion, garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally, until the vegetables are softened.

Stir in dried basil, oregano, and crushed red pepper flakes (if using). Cook for 1 minute to release the aromas.

Bring to a boil, then reduce the heat to low and let the soup simmer for 20-25 minutes.
-
Stir in the heavy cream, and season with salt and pepper to taste.
