Preparation Steps
- Preheat your oven to 325˚F (160˚C).
- Spread the assorted nuts in a single layer on a rimmed sheet pan and bake for 5-8 minutes.
- Line an 8x8-inch pan with parchment paper.
- In a large mixing bowl, combine the roasted nuts and puffed rice, tossing well.
- Heat the brown rice syrup in a microwave-safe bowl for 30 seconds; stir in vanilla extract and sea salt before pouring over the nut mixture.
- Transfer the nut mixture to the prepared pan, pressing down firmly.
- Bake for 18-20 minutes, then allow to cool for about 30 minutes.
- Melt dark chocolate chips and coconut oil: heat in microwave for 30 seconds; stirring until smooth.
- Dip the cooled nut bars into the melted chocolate and drizzle more on top, finishing with a sprinkle of flaky salt.
- Refrigerate until chocolate is set.
