- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface until it’s smooth and even.
- Sprinkle shredded mozzarella cheese evenly over the pastry, leaving a small border around the edges.
- Layer pepperoni slices on top of the cheese, then sprinkle with the dried Italian herbs.
- Roll the pastry tightly into a log, ensuring the filling is snug inside, and cut it into 1-inch slices.
- Arrange the slices cut-side up on your prepared baking sheet and give each a gentle brush with the beaten egg.
- Bake for 15–18 minutes or until they are golden brown and flaky.
