Ingredients

For the Dough
  • 4 cups All-purpose flour Substitution: Use bread flour for a chewier texture.
  • 1 cup Whole milk Substitution: Almond or oat milk works for a dairy-free option.
  • 1 large egg Substitution: Flax egg (1 tbsp ground flaxseed + 3 tbsp water) can replace the egg for a vegan version.
  • 1/2 cup unsalted butter Substitution: Coconut oil can be used for a dairy-free alternative.
  • 2 tbsp instant yeast Note: Active dry yeast can be used with adjustments in water.
  • 2 tbsp granulated sugar Note: Regular sugar with vanilla extract can be substituted if vanilla sugar isn’t on hand.
  • 1 tbsp vanilla sugar
  • 1 pinch salt
For the Filling
  • 8 oz cream cheese Note: Opt for low-fat cream cheese for a lighter option.
  • 2 cups diced apples Note: Choose firm varieties like Granny Smith or Honeycrisp for best results.
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon
  • 2 tbsp cornstarch Note: Mix with a little water before adding to the filling for best results.
For the Crumble Topping
  • 1/2 cup cold butter Note: Keep chilled to maintain a crumbly texture.
  • 1/4 cup sugar
For the Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk Note: Adjust the consistency with more milk or sugar to suit your preference.
  • 1 large egg yolk Used for the egg wash to achieve a lovely golden color on top of the buns.

Equipment

  • large bowl
  • Skillet
  • Baking Sheet
  • glass for indentation

Method

Dough Preparation
  1. In a large bowl, mix together the flour, warm milk, egg, yeast, sugars, and salt. Knead the mixture for about 5-10 minutes until it’s smooth and elastic. Let it rise in a warm area for 1 hour, or until doubled in size.
  2. Once the dough has risen, divide it into 9 equal portions and shape each into balls. Let them rest for 15 minutes to relax the gluten.
Filling Preparation
  1. In a skillet, sauté the diced apples with butter, brown sugar, and cinnamon until they become soft (about 5-7 minutes). Stir in the cornstarch mixed with a little water, cooking until it thickens. Set aside to cool.
  2. In a bowl, whisk together the cream cheese, granulated sugar, and vanilla sugar until smooth and creamy.
Assembling Buns
  1. Take a floured glass and firmly press down the center of each dough ball to create a deep well.
  2. Brush the edges of the indentations with egg yolk. Add 1 tablespoon of the cheesecake mixture followed by 1 tablespoon of the apple filling into each well. Generously top each bun with crumble mixture.
Baking
  1. Preheat your oven to 180°C (350°F). Place the assembled buns on a baking sheet and bake for 20-25 minutes, or until they are golden brown and puffed.
  2. Allow the buns to cool slightly before drizzling with the powdered sugar glaze for a touch of sweetness.
  3. Optional: Dust with additional powdered sugar before serving for an extra sweet finish.

Notes

Refrigerate any leftovers due to the cream cheese filling. Reheating at 300°F for about 5 minutes restores their soft texture.
