Method
 

Prepare Apple Filling
  1. Combine diced apples, lemon juice, sugars, spices, and salt in a pot. Let sit for 10 minutes. Add melted butter and simmer until apples are tender, about 8-10 minutes. Stir in cornstarch slurry and cook until thickened for 1-2 minutes. Finally, add vanilla and let cool.
Make Crumb Topping
  1. In a bowl, whisk together flour, sugars, cinnamon, and salt. Mix in melted butter and vanilla until it resembles wet sand. Chill until ready.
Muffin Preparation
  1. Preheat your oven to 425°F (220°C) and prepare a muffin tin with liners. In a bowl, mix dry ingredients including flour, baking powder, baking soda, and spices.
Combine Wet Ingredients
  1. In another bowl, whisk melted butter, both sugars, milk, eggs, sour cream, and vanilla until fully combined.
Incorporate Dry Ingredients
  1. Gently fold dry ingredients into wet ingredients. Mix until just combined. Fold in chopped, floured apples to prevent sinking.
Fill Muffin Liners
  1. Spoon batter into muffin liners until about ¾ full. Add apple filling on top and sprinkle with crumb topping.
Bake
  1. Bake at 425°F (220°C) for 5 minutes. Reduce temperature to 350°F (175°C) and bake for 14-18 minutes, or until a toothpick comes out clean. Cool for a few minutes before transferring to a wire rack.
Optional Glaze
  1. Drizzle with glaze for added sweetness.
