- Season the chicken breasts generously with salt and black pepper.
- Heat the skillet over medium heat, add olive oil or butter, and sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add the sliced onions and sauté for about 3-4 minutes until softened and caramelized.
- Stir in the diced apples and cook for another 2-3 minutes until softened.
- Pour in the apple cider and chicken broth, scraping any browned bits from the skillet.
- Add fresh thyme, return the chicken to the skillet, and simmer for 8-10 minutes until the chicken reaches 160°F and the sauce thickens.
- Serve over mashed potatoes or rice, topped with fresh thyme sprigs.
