Ingredients
  

For the Chicken
  • 4 pieces boneless skinless chicken breasts
For the Sauce
  • 2 tablespoons olive oil or butter
  • 1 cup apple cider do not substitute with vinegar
  • 1 cup chicken broth low-sodium preferred
For the Vegetables
  • 1 medium yellow onion sliced
  • 2 cups Honeycrisp or Gala apples diced
  • 1 teaspoon fresh thyme or dried
For Seasoning
  • to taste salt
  • to taste black pepper

Method
 

Cooking Instructions
  1. Season the chicken breasts generously with salt and black pepper.
  2. Heat the skillet over medium heat, add olive oil or butter, and sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add the sliced onions and sauté for about 3-4 minutes until softened and caramelized.
  4. Stir in the diced apples and cook for another 2-3 minutes until softened.
  5. Pour in the apple cider and chicken broth, scraping any browned bits from the skillet.
  6. Add fresh thyme, return the chicken to the skillet, and simmer for 8-10 minutes until the chicken reaches 160°F and the sauce thickens.
  7. Serve over mashed potatoes or rice, topped with fresh thyme sprigs.
