Preparation
- Preheat the oven to 350°F (175°C).
- Whisk together cottage cheese and eggs in a mixing bowl until smooth.
- Stir in shredded cheddar and Parmesan cheeses until well blended.
- Mix in garlic powder, onion powder, salt, and pepper.
- Fold in diced bell pepper and chopped chives, if using.
- Grease a medium baking dish (around 8x8 inches) with olive oil or melted butter.
- Pour the mixture into the greased dish, spreading it evenly.
- Bake for 25-30 minutes until the edges are golden brown and the center is set.
- Cool for 5 minutes before cutting into squares or rectangles.
- Serve warm, garnished with extra chives or cheese as desired.
