  • 1 loaf sturdy bread (French baguette or ciabatta)
  • 4 eggs fresh
  • 1/2 cup milk or cream

  • 4 slices turkey bacon or chicken bacon
  • 1 cup spinach fresh, chopped
  • 1 cup bell peppers diced
For the Topping
  • 1 cup cheese cheddar or mozzarella

Preparation
  1. Slice the bread in half lengthwise and hollow out the center of each piece to create boats.
  2. In a skillet, sauté the turkey bacon over medium heat until crispy. Add spinach and bell peppers, cooking until softened, about 3-5 minutes.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper until fluffy.
  4. Fill each bread boat with the turkey bacon and veggie mixture, then pour the egg mixture over each, topping with cheese.
  5. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes until eggs are set and cheese is golden.
