Method
 

Preparation Steps
  1. Caramelize Onions: Slice the onions and sauté in olive oil over medium-low heat for 30-40 minutes until golden brown. Add garlic in the last 5 minutes if desired.
  2. Prepare Potatoes: Peel and cut the Yukon Gold potatoes into chunks, boil in salted water for 15-20 minutes until fork-tender. Drain and return to pot.
  3. Mash Potatoes: Add butter, warm cream, salt, and pepper to the potatoes and mash until smooth. Adjust seasoning as needed.
  4. Combine Ingredients: Preheat oven to 375°F. Fold in half of the Gruyère and two-thirds of the caramelized onions into the potatoes.
  5. Bake: Transfer to a greased baking dish, top with remaining onions and Gruyère. Bake for 20-25 minutes until golden and bubbly.
  6. Serve: Let rest for 5 minutes, garnish with thyme or parsley, and serve warm.
