Preparation
  1. Preheat your oven to 180°C (350°F). Grease a donut pan thoroughly.
  2. Mix almond milk and apple cider vinegar in a medium bowl and let it sit for 5 minutes.
  3. Sift together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, and matcha powder.
  4. Whisk the wet ingredients: almond milk mixture, melted coconut oil, and vanilla extract.
  5. Combine wet and dry ingredients gently until just mixed.
  6. Pipe the batter into the donut pan, filling each cavity 3/4 full.
  7. Bake the donuts for 10-12 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the donuts in the pan for 5 minutes before transferring to a wire rack.
  9. Prepare the glaze by whisking icing sugar, almond milk, matcha powder, and melted coconut oil until smooth.
  10. Dip warm donuts into the glaze and add toppings if desired.
