- Preheat oven to 375°F (190°C).
- In a bowl, whisk together orange juice, orange zest, honey, minced garlic, olive oil, soy sauce, salt, and pepper.
- Place chicken thighs in a single layer in a baking dish.
- Pour the marinade generously over the chicken.
- Add fresh cranberries around the chicken.
- Sprinkle dried thyme over the mixture.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 20-25 minutes until golden brown and internal temperature is 165°F (74°C).
- For extra crispiness, broil for 2-3 minutes if desired.
- Let rest for a few moments before serving and garnish with fresh rosemary if desired.
