Steps
  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together orange juice, orange zest, honey, minced garlic, olive oil, soy sauce, salt, and pepper.
  3. Place chicken thighs in a single layer in a baking dish.
  4. Pour the marinade generously over the chicken.
  5. Add fresh cranberries around the chicken.
  6. Sprinkle dried thyme over the mixture.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil and bake for an additional 20-25 minutes until golden brown and internal temperature is 165°F (74°C).
  9. For extra crispiness, broil for 2-3 minutes if desired.
  10. Let rest for a few moments before serving and garnish with fresh rosemary if desired.
