How to Make BBQ Chicken Sweet Potato Skillet
  1. Heat olive oil in a large skillet over medium heat. Add skinless, boneless chicken pieces and cook until golden brown and tender, about 5-7 minutes.
  2. Shred the chicken using two forks and set aside.
  3. In the same skillet, toss in diced sweet potatoes. Cook until fork-tender, around 10-15 minutes, stirring occasionally.
  4. Return the shredded chicken back to the skillet, then pour in your favorite BBQ sauce. Stir and heat through for 3-5 minutes.
  5. Remove from heat and top with freshly chopped green onions before serving.
