How to Make Best Pesto Grilled Cheese
  1. Lay out two slices of sourdough in a clean frying pan. Prepare your toppings nearby.
  2. Generously spread butter on the top side of each slice, then flip them butter side down in the pan.
  3. On each slice, layer 3-4 slices of mozzarella, followed by a heaped tablespoon of basil pesto. If including sun-dried tomatoes or bacon, sprinkle them on top.
  4. Top each with another slice of sourdough and gently press down.
  5. Butter the outer sides of the sandwiches, then heat the pan over medium-low. Cook until golden brown, about 3-4 minutes per side.
  6. Remove from the pan and let cool slightly before slicing. Serve warm.
