How to Make Best Pesto Grilled Cheese
- Lay out two slices of sourdough in a clean frying pan. Prepare your toppings nearby.
- Generously spread butter on the top side of each slice, then flip them butter side down in the pan.
- On each slice, layer 3-4 slices of mozzarella, followed by a heaped tablespoon of basil pesto. If including sun-dried tomatoes or bacon, sprinkle them on top.
- Top each with another slice of sourdough and gently press down.
- Butter the outer sides of the sandwiches, then heat the pan over medium-low. Cook until golden brown, about 3-4 minutes per side.
- Remove from the pan and let cool slightly before slicing. Serve warm.
