  • 2 slices Ciabatta Substitute with French Baguette or Sourdough if desired.
  • 4 oz Fresh Mozzarella Pat it dry to avoid sogginess.
  • 2 tbsp Parmesan Can be substituted with Grana Padano.
For the Bruschetta Filling
  • 2 cups Fresh Tomatoes Diced and patted dry.
  • 1/4 cup Red Onion Optional; omit for a milder flavor.
  • 1/4 cup Fresh Basil Substitute with dried basil if necessary.
  • 1 clove Garlic Fresh garlic is recommended for maximum flavor.
  • 1 tbsp Balsamic Glaze Optional drizzle for added sweetness and acidity.
For Cooking
  • 2 tbsp Extra Virgin Olive Oil For brushing the bread.

Preparation
  1. Start by dicing fresh tomatoes and mixing them with finely diced red onion, basil, olive oil, salt, and pepper in a bowl. Press out any excess moisture.
  2. Lightly brush one side of the ciabatta slices with extra virgin olive oil. Flip half of the slices over and layer them with fresh mozzarella and your prepared bruschetta mixture.
  3. Carefully stack the oiled slice on top of the filling to prevent spills while grilling.
  4. Preheat a griddle or frying pan over medium heat. Cook the sandwiches until golden brown, about 3-5 minutes.
  5. Gently flip the sandwiches and rub them with a clove of fresh garlic as they grill.
  6. Plate your sandwiches and drizzle with balsamic glaze before serving.
