  • 1 teaspoon Baking Powder Crucial if you're not using self-raising flour.
  • 100 grams Butter (unsalted, cold, cubed) Ensure it’s cold to maintain a flaky texture.
  • 50 grams Caster Sugar Granulated sugar works well in a pinch.
  • 250 ml Buttermilk Can be swapped with yogurt or milk mixed with vinegar if necessary.
  • 1 teaspoon Salt Opt for fine sea salt for better mixing.
For Finishing Touches
  • 2 tablespoons Milk (for brushing) Brush lightly for a golden finish.

Method
 

How to Make Buttermilk Scones
  1. Preheat the oven to 220°C (200°C fan).
  2. Sift the self-raising flour and baking powder together in a large mixing bowl.
  3. Incorporate the cold, cubed butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.
  4. Stir in the caster sugar and a pinch of salt, mixing evenly.
  5. Create a well in the center and gently pour in the buttermilk, mixing until a soft dough forms without overworking it.
  6. Turn the dough onto a lightly floured surface and gently knead it just until smooth.
  7. Pat the dough down to about 2.5cm thick and cut out rounds with a 6cm cutter.
  8. Place the rounds on a parchment-lined baking tray and brush the tops with milk.
  9. Bake in the preheated oven for 12-15 minutes, or until risen and golden brown.
  10. Cool the scones slightly on a wire rack before serving.
