Making the Candied Pineapple Bites
- In a pot, mix diced pineapple, granulated sugar, apple cider vinegar, turmeric, cayenne, ginger, and salt. Stir well to coat the pineapple evenly, creating a sweet and tangy base.
- Heat the mixture over medium heat. Let it simmer while stirring occasionally until the syrup thickens and turns glossy, about 30-40 minutes.
- Carefully use a slotted spoon to scoop the pineapple pieces out of the pot and place them on a wire rack. Allow them to drain excess syrup for a minute or two.
- Take some additional granulated sugar and sprinkle it over the pineapple pieces. Gently toss to coat the bites evenly.
- Let the candied pineapple bites sit until they are set, at least 30 minutes. Once ready, store them in an airtight container at room temperature for up to two weeks.
