Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium saucepan, melt ½ cup of unsalted butter over medium heat, being careful not to brown it.
- Add 1 cup of brown sugar and ½ cup of light corn syrup to the melted butter. Stir continuously until gently boiling, then let boil for 2-3 minutes without stirring.
- Remove from heat and stir in 1 teaspoon of vanilla extract.
- Spoon about one tablespoon of the hot caramel onto each Ritz cracker.
- While the caramel is warm, sprinkle chopped salted peanuts on top.
- Let the crackers cool completely on the baking sheet for about 15-20 minutes.
