How to Make Caramelised Soy Chicken in Garlic Ginger Broth
- Cut the chicken thighs into bite-sized pieces and season them generously with salt and pepper.
- In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, minced ginger, and brown sugar. Marinate chicken for 10 minutes.
- Rinse jasmine rice in cold water, bring 2 cups of water to a boil, add rice, cover, and simmer for 15 minutes.
- Heat sesam oil in a pot over medium-high heat, add marinated chicken, and sauté for 5-7 minutes until caramelized.
- Pour in chicken broth and rice vinegar, bring to a boil, then reduce heat and simmer.
- Slowly add cornstarch mixture while stirring, simmer for additional 5 minutes.
- Adjust seasoning with salt and pepper to taste.
- Ladle chicken and broth over fluffy jasmine rice.
- Garnish with sliced green onions.
