  • 2 tablespoons Soy Sauce Low-sodium optional
  • 1 tablespoon Sesame Oil Nutty aroma
  • 3 cloves Garlic Minced
  • 1 inch Ginger Minced
  • 1 tablespoon Brown Sugar Honey alternative
For the Broth
  • 3 cups Chicken Broth Homemade or low-sodium
  • 1 tablespoon Rice Vinegar Apple cider vinegar optional
  • 1 tablespoon Cornstarch Mixed with 2 tbsp water for thickening
For the Rice
  • 1 cup Jasmine Rice Basmati rice is a substitute
  • 2 cups Water Required for cooking rice
For Garnish
  • 2 Green Onions Sliced
  • Salt and Pepper To taste

Method
 

How to Make Caramelised Soy Chicken in Garlic Ginger Broth
  1. Cut the chicken thighs into bite-sized pieces and season them generously with salt and pepper.
  2. In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, minced ginger, and brown sugar. Marinate chicken for 10 minutes.
  3. Rinse jasmine rice in cold water, bring 2 cups of water to a boil, add rice, cover, and simmer for 15 minutes.
  4. Heat sesam oil in a pot over medium-high heat, add marinated chicken, and sauté for 5-7 minutes until caramelized.
  5. Pour in chicken broth and rice vinegar, bring to a boil, then reduce heat and simmer.
  6. Slowly add cornstarch mixture while stirring, simmer for additional 5 minutes.
  7. Adjust seasoning with salt and pepper to taste.
  8. Ladle chicken and broth over fluffy jasmine rice.
  9. Garnish with sliced green onions.
