Method
 

Making the Tart
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Cook sliced onions in a skillet with olive oil over medium-low heat and add salt. Allow them to caramelize for 25-30 minutes.
  4. Sauté sliced cremini mushrooms in the same skillet until golden and evaporated, about 8-10 minutes.
  5. Prepare puff pastry by unrolling it and scoring a 1-inch border around the edge.
  6. Spread goat cheese over the docked area of the pastry, followed by caramelized onions and sautéed mushrooms.
  7. Brush the pastry border with whisked egg.
  8. Bake for 20 minutes at 400°F (200°C), then reduce to 375°F (190°C) and bake for an additional 15-20 minutes.
  9. Cool slightly before garnishing with fresh thyme.
