Making the Tart
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Cook sliced onions in a skillet with olive oil over medium-low heat and add salt. Allow them to caramelize for 25-30 minutes.
- Sauté sliced cremini mushrooms in the same skillet until golden and evaporated, about 8-10 minutes.
- Prepare puff pastry by unrolling it and scoring a 1-inch border around the edge.
- Spread goat cheese over the docked area of the pastry, followed by caramelized onions and sautéed mushrooms.
- Brush the pastry border with whisked egg.
- Bake for 20 minutes at 400°F (200°C), then reduce to 375°F (190°C) and bake for an additional 15-20 minutes.
- Cool slightly before garnishing with fresh thyme.
