How to Make Caramelized Onion Risotto
  1. Heat olive oil and 1 tablespoon of butter in a pot over medium-high heat. Add two-thirds of the sliced onions and cook for about 20 minutes until golden.
  2. Add Arborio rice and remaining onions; stir for 2-3 minutes until rice releases a nutty aroma.
  3. Pour in 1 cup of warm vegetable broth, allowing rice to absorb fully before adding more; repeat for about 15 minutes.
  4. Remove from heat, mix in cold butter and thyme until creamy.
  5. Sauté remaining onions in a skillet until crispy as a topping.
