Ingredients
  

Steak Marinade
  • 1 pound Flank Steak Can swap for skirt steak if needed.
  • 1/2 cup Orange Juice Freshly squeezed.
  • 1/4 cup Low Sodium Soy Sauce Opt for tamari for gluten-free.
  • 2 tablespoons Lime Juice Freshly squeezed.
  • 2 tablespoons Olive Oil Avocado oil can be substituted.
  • 1 teaspoon Red Chili Flakes Adjust to taste.
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Black Pepper Freshly cracked.
  • 1/4 cup Fresh Cilantro Chopped finely.
  • 1 whole Jalapeño Remove seeds for mildness.
  • 3 cloves Garlic Pressed.
Salsa
  • 1 cup Cherry Tomatoes Halved.
  • 1 medium Avocado Ripe yet firm.
  • 1/2 cup White Onion Chopped.
  • 1/2 cup Feta Cheese Crumbled.
Assembly
  • 8 pieces Corn Tortillas

Method
 

Marinating & Grilling
  1. In a large dish, whisk together orange juice, soy sauce, lime juice, olive oil, chili flakes, cumin, black pepper, cilantro, jalapeño, and garlic. Add flank steak, cover, and refrigerate for 1-12 hours.
  2. Preheat your grill or grill pan to medium-high.
  3. Grill marinated steak for 7-10 minutes per side until medium-rare. Let it rest for 5 minutes.
Salsa Preparation & Assembly
  1. In a bowl, combine cherry tomatoes, avocado, onion, jalapeño, cilantro, olive oil, crumbled feta, and salt.
  2. Warm corn tortillas in the microwave for 30 seconds.
  3. Slice rested steak against the grain and layer in warmed tortillas. Top with avocado feta salsa.
