- Preheat the oven to 425ºF (220ºC). While it heats, place a 12-inch cast iron skillet inside to get nice and hot.
- Whisk together the flour, salt, pepper, and ½ cup of cheddar cheese in a mixing bowl until well combined.
- Combine the eggs, milk, chives, and mustard powder in another bowl, whisking until the mixture is smooth.
- Gently fold the wet and dry ingredients together until just combined.
- Melt the butter and carefully add it to the hot skillet. Pour in the batter.
- Bake for 15 minutes until edges are beginning to turn golden brown, then sprinkle remaining cheddar cheese on top.
- Continue baking for an additional 10 minutes until the Dutch babies are puffed and golden brown.
- Serve warm by slicing into wedges with a spatula. Add optional toppings as desired.
