- Preheat the oven to 400°F (200°C).
- Wash and scrub 1.5 pounds of baby potatoes. Slice each potato in half.
- In a large bowl, combine 2 tablespoons of olive oil, ranch dressing mix, garlic, onion powder, salt, and pepper.
- Toss the halved potatoes in the seasoning mixture until evenly coated.
- Spread coated potatoes on a parchment-lined baking sheet.
- Bake for 30-35 minutes until golden brown and tender.
- Remove and sprinkle cheddar and Parmesan cheese over the potatoes. Bake for another 5-7 minutes until cheese is melted.
- Garnish with freshly chopped parsley before serving.
