  • 1.5 pounds Baby Potatoes
  • 2 tablespoons Olive Oil Can substitute with melted butter
For the Seasoning
  • 1 packet Ranch Dressing Mix Or homemade ranch seasoning
  • 4 cloves Garlic Minced; roasted garlic can be used for milder flavor
  • 1 teaspoon Onion Powder Can add fresh onions if desired
  • Salt and Pepper Adjust to taste
For the Cheesy Topping
  • 1 cup Shredded Cheddar Cheese Can opt for Monterey Jack
  • 0.5 cup Grated Parmesan Cheese Pecorino Romano works as alternative
  • 0.25 cup Fresh Parsley Chopped, can substitute with chives or green onions

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub 1.5 pounds of baby potatoes. Slice each potato in half.
  3. In a large bowl, combine 2 tablespoons of olive oil, ranch dressing mix, garlic, onion powder, salt, and pepper.
  4. Toss the halved potatoes in the seasoning mixture until evenly coated.
  5. Spread coated potatoes on a parchment-lined baking sheet.
  6. Bake for 30-35 minutes until golden brown and tender.
  7. Remove and sprinkle cheddar and Parmesan cheese over the potatoes. Bake for another 5-7 minutes until cheese is melted.
  8. Garnish with freshly chopped parsley before serving.
