For the Potatoes

  • 1 teaspoon Paprika consider smoked paprika or cayenne for heat
  • 1 teaspoon Dried Oregano fresh oregano can be used for a brighter flavor (double the amount)
For the Topping
  • 1 cup Cheddar Cheese substitute with mozzarella or pepper jack for different flavors
  • 1 cup Beef Broth use vegetable broth or water for a lighter version
  • 2 tablespoons Fresh Parsley can substitute with chives or cilantro

Directions
  1. Begin by heating olive oil in a large skillet over medium heat.
  2. Add the ground beef to the skillet; cook until browned, breaking it apart with a spatula into small pieces for about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic; cook for 3-4 minutes until they are softened and fragrant.
  4. Add the diced potatoes to the skillet, seasoning them with salt, pepper, paprika, and dried oregano.
  5. Pour in the beef broth and cover the skillet; reduce the heat to low and let it simmer for 20-25 minutes.
  6. Once the potatoes are ready, sprinkle the shredded cheddar cheese over the top; cover and cook for another 2-3 minutes.
  7. Finally, garnish your dish with freshly chopped parsley before serving.
