For the Casserole
  • 1 lb Ground Beef or turkey or plant-based meat
  • 1 medium Yellow Onion or shallots/leeks
  • 4 medium Russet Potatoes or Yukon Gold potatoes
  • 2 cups Grated Cheddar Cheese or Monterey Jack cheese
For the Creamy Sauce
  • 1 can Condensed Cheddar Soup or homemade cheese sauce
  • 1 cup Evaporated Milk or heavy cream
  • 1/2 cup Milk or almond milk for dairy-free
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper

Method
 

Preparation
  1. Preheat oven to 350°F (177°C) and spray a 9x13-inch baking dish with nonstick spray.
  2. In a large skillet, brown the ground beef with the diced onion over medium-high heat, seasoning with salt and pepper. Drain excess fat.
  3. Layer the sliced potatoes in the baking dish, followed by the beef mixture and cheese. Repeat layering until all ingredients are used.
  4. In a mixing bowl, combine condensed cheddar soup, evaporated milk, milk, and garlic powder until smooth.
  5. Pour the sauce evenly over layered ingredients in the dish.
  6. Cover with foil and bake for 60 minutes.
  7. Remove foil and bake uncovered for an additional 15 minutes until golden brown and bubbly.
  8. Let cool for several minutes before serving.
