How to Make Cheesy Mushroom Rice Bake
  1. Sauté Aromatics: In a pot, melt butter over medium heat. Add diced onion and minced garlic, cooking until soft (about 3–4 minutes). Toast the rice for another 2 minutes.
  2. Prepare Sauce: Gradually whisk in chicken broth and heavy cream. Allow the mixture to simmer for 5–7 minutes until it thickens.
  3. Combine Ingredients: Stir in the cubed chicken and sliced mushrooms, mixing until well combined. Add shredded cheese and stir until it melts.
  4. Transfer & Bake: Preheat your oven to 350°F (175°C). Pour mixture into a greased casserole dish. Top with reserved cheese and bake for 40–45 minutes.
  5. Brown & Rest: In the last 10 minutes, remove foil to allow cheese to brown. Let dish rest for 10 minutes before serving.
