- In a large skillet, warm up the olive oil over medium-high heat.
- Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-6 minutes.
- Stir in the diced onion, cooking until softened, roughly 3-4 minutes. Add the garlic and cook for another minute until fragrant.
- Toss in the mushrooms and bell peppers; cook until softened, about 3-4 minutes.
- Pour in the marinara sauce and chicken broth. Season with Italian seasoning and red pepper flakes. Bring to a gentle simmer.
- Stir the cheese tortellini into the skillet, cover, and simmer for 10-12 minutes until tender.
- Add half of the pepperoni to the skillet and warm through for about 2 minutes. Top with dollops of ricotta, mozzarella, and the remaining pepperoni.
- Cover the skillet to allow the cheese to melt for 3-4 minutes. Optionally, broil for 2-3 minutes for a bubbly finish.
- Sprinkle fresh basil over the top for a burst of flavor. Serve immediately.
