For the Sauce

  • 1 cup Chicken broth Vegetable broth works well in a vegetarian version
  • 1 tablespoon Italian seasoning Mixed herbs or Italian spice blends can be alternatives
  • 1 teaspoon Red pepper flakes Add less for a milder meal
For the Pasta and Toppings
  • 20 ounces Cheese tortellini Use frozen or fresh for delightful texture
  • 4 ounces Pepperoni Feel free to swap with your favorite toppings
  • 1 cup Ricotta cheese Cream cheese can be a suitable alternative
  • 1 cup Mozzarella cheese Creates cheesy meltiness
  • 1/2 cup Parmesan cheese Substitute with your favorite melting cheeses if desired
  • 1 cup Fresh basil For garnish

Instructions
  1. In a large skillet, warm up the olive oil over medium-high heat.
  2. Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-6 minutes.
  3. Stir in the diced onion, cooking until softened, roughly 3-4 minutes. Add the garlic and cook for another minute until fragrant.
  4. Toss in the mushrooms and bell peppers; cook until softened, about 3-4 minutes.
  5. Pour in the marinara sauce and chicken broth. Season with Italian seasoning and red pepper flakes. Bring to a gentle simmer.
  6. Stir the cheese tortellini into the skillet, cover, and simmer for 10-12 minutes until tender.
  7. Add half of the pepperoni to the skillet and warm through for about 2 minutes. Top with dollops of ricotta, mozzarella, and the remaining pepperoni.
  8. Cover the skillet to allow the cheese to melt for 3-4 minutes. Optionally, broil for 2-3 minutes for a bubbly finish.
  9. Sprinkle fresh basil over the top for a burst of flavor. Serve immediately.
