Method
 

Steps
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the potatoes by peeling and slicing them into thin, uniform rounds.
  3. Mix together the sour cream, sharp cheddar cheese, Parmesan cheese, butter, green onions, salt, and pepper in a large bowl until well combined.
  4. Layer half of the potato slices in a greased baking dish and spoon half of the sour cream mixture over them. Repeat with remaining potatoes and sauce.
  5. Crown your creation with breadcrumbs and additional cheese if desired.
  6. Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden and bubbly.
  7. Cool slightly before serving to allow layers to set.
