Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. Layer half of the potato slices in a greased baking dish, followed by half of the onion rings. Repeat the layering.
  3. Melt the butter in a saucepan over medium heat. Whisk in the flour and salt; cook until light golden, about 1-2 minutes.
  4. Gradually whisk in the milk, stirring constantly, until the sauce thickens, about 5-7 minutes. Remove from heat and stir in cheddar until melted.
  5. Pour the cheese sauce over the layered potatoes and onions, ensuring everything is covered evenly. Sprinkle with additional salt and pepper.
  6. Cover with foil and bake for 35 minutes. Remove foil and continue baking for 25-30 minutes until tender and golden brown.
  7. Cool for 5-10 minutes before serving to help set the layers.
