Preparation

- Layer half of the potato slices in a greased baking dish, followed by half of the onion rings. Repeat the layering.
- Melt the butter in a saucepan over medium heat. Whisk in the flour and salt; cook until light golden, about 1-2 minutes.
- Gradually whisk in the milk, stirring constantly, until the sauce thickens, about 5-7 minutes. Remove from heat and stir in cheddar until melted.
- Pour the cheese sauce over the layered potatoes and onions, ensuring everything is covered evenly. Sprinkle with additional salt and pepper.
- Cover with foil and bake for 35 minutes. Remove foil and continue baking for 25-30 minutes until tender and golden brown.
