Ingredients
  

For the Creamy Base
  • 8 oz Mascarpone cheese Can substitute with cream cheese for a tangier flavor.
  • 1 cup Heavy cream Non-dairy whipped cream may be used for a lighter version.
  • 1/2 cup Amaretto liqueur Use almond extract and water for a non-alcoholic alternative.
  • 1 tsp Vanilla extract Pure vanilla extract is preferred.
For the Cherry Mixture
  • 1/2 cup Cherry juice Fresh juice enhances the flavor.
  • 1 cup Fresh cherries Frozen cherries can be used if well-drained.
  • 1/4 cup Granulated sugar Adjust to taste based on cherry sweetness.
  • 1/4 cup Cherry preserves Can be replaced with any fruit preserve.
For the Layers
  • 24 pieces Ladyfingers Savoiardi biscuits are recommended.
  • 2 tbsp Cocoa powder Use Dutch-processed for smoother taste.
  • 1 oz Dark chocolate Shaved or grated for garnish; can be omitted.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine mascarpone cheese and heavy cream until smooth and fluffy, blending for about 2-3 minutes.
  2. Beat in the amaretto liqueur, cherry juice, and vanilla; mix well for another 1-2 minutes.
  3. In a small bowl, mix granulated sugar and cherry preserves, then blend this mixture into your mascarpone for about 1 minute.
  4. Gently fold in chopped fresh cherries until evenly distributed.
  5. In a shallow dish, combine amaretto and cherry juice for soaking the ladyfingers.
  6. Quickly dip each ladyfinger into the mixture and layer them in a 9x13 inch baking dish.
  7. Spread half of the mascarpone mixture over the ladyfingers.
  8. Top with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, dust the top with cocoa powder and garnish with dark chocolate.
