Preparation Steps
- In a large mixing bowl, combine mascarpone cheese and heavy cream until smooth and fluffy, blending for about 2-3 minutes.
- Beat in the amaretto liqueur, cherry juice, and vanilla; mix well for another 1-2 minutes.
- In a small bowl, mix granulated sugar and cherry preserves, then blend this mixture into your mascarpone for about 1 minute.
- Gently fold in chopped fresh cherries until evenly distributed.
- In a shallow dish, combine amaretto and cherry juice for soaking the ladyfingers.
- Quickly dip each ladyfinger into the mixture and layer them in a 9x13 inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Top with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust the top with cocoa powder and garnish with dark chocolate.
