Method
 

Truffle Preparation
  1. Chop high-quality chocolate into small pieces and place them in a heatproof bowl.
  2. Heat heavy cream in a saucepan over medium heat until it simmers. Pour it over the chocolate and let it rest for about 2 minutes.
  3. Stir gently until the chocolate melts completely, then add cherry puree and cherry liqueur (if using). Mix well.
  4. Cover with plastic wrap and refrigerate ganache for about 2 hours until firm.
  5. Scoop out approximately 1 tablespoon of ganache and roll it to form a ball.
  6. Coat each ball in cocoa powder or chopped nuts.
  7. Chill the coated truffles on a tray for an additional 30 minutes.
