Truffle Preparation
- Chop high-quality chocolate into small pieces and place them in a heatproof bowl.
- Heat heavy cream in a saucepan over medium heat until it simmers. Pour it over the chocolate and let it rest for about 2 minutes.
- Stir gently until the chocolate melts completely, then add cherry puree and cherry liqueur (if using). Mix well.
- Cover with plastic wrap and refrigerate ganache for about 2 hours until firm.
- Scoop out approximately 1 tablespoon of ganache and roll it to form a ball.
- Coat each ball in cocoa powder or chopped nuts.
- Chill the coated truffles on a tray for an additional 30 minutes.
