How to Make Chewy French Toast Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
- Cream together softened unsalted butter and brown sugar in a larger bowl until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the milk, stirring until the mixture is smooth.
- Combine the dry ingredients into the wet mixture; mix on low speed until just combined.
- Stir in the rolled oats and then gently fold in the white chocolate chips.
- Drop tablespoon-sized balls of dough onto your prepared baking sheet, spacing them about 2 inches apart.
- Press down lightly on each dough ball to flatten them slightly.
- Bake for 10-12 minutes until the edges are golden and the centers are set.
- Cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes
Optional: Dust with powdered sugar for an extra touch of sweetness. Room temperature butter and avoiding overmixing are key for the perfect chewiness.
