Ingredients
  

For the Chicken
  • 1 pound chicken thighs Trim excess fat for best results
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
For the Sauce
  • 2 large oranges Juiced or zested
  • 2 tablespoons honey
  • 2 cloves garlic Minced
  • 1 tablespoon white vinegar
  • 2 tablespoons soy sauce Low sodium
For Garnish
  • 1/4 cup cilantro Use both leaves and stems

Method
 

Preparation
  1. Cut chicken thighs into 1-1½ inch pieces and place them in a bowl. Coat with cumin, smoked paprika, and salt to season.
  2. In a small bowl, whisk together orange juice, honey, minced garlic, white vinegar, and soy sauce. Set aside.
  3. Heat olive oil in a large sauté pan over medium-high heat. Sauté the chicken for about 3 minutes, flip, and cook for an additional 2-3 minutes until browned and 165°F internal temperature. Remove and keep warm.
  4. Lower the heat to medium and add the orange-honey sauce to the same pan. Scrape up browned bits and let it simmer for about 4-5 minutes until slightly thickened.
  5. Return the cooked chicken to the pan, toss with chopped cilantro, and mix gently until coated in sauce. Let simmer for a moment if desired.
  6. Plate the chicken bites, drizzle with extra sauce, and garnish with fresh cilantro.
