Preparation
- Cut chicken thighs into 1-1½ inch pieces and place them in a bowl. Coat with cumin, smoked paprika, and salt to season.
- In a small bowl, whisk together orange juice, honey, minced garlic, white vinegar, and soy sauce. Set aside.
- Heat olive oil in a large sauté pan over medium-high heat. Sauté the chicken for about 3 minutes, flip, and cook for an additional 2-3 minutes until browned and 165°F internal temperature. Remove and keep warm.
- Lower the heat to medium and add the orange-honey sauce to the same pan. Scrape up browned bits and let it simmer for about 4-5 minutes until slightly thickened.
- Return the cooked chicken to the pan, toss with chopped cilantro, and mix gently until coated in sauce. Let simmer for a moment if desired.
- Plate the chicken bites, drizzle with extra sauce, and garnish with fresh cilantro.
