  • 2 tablespoons Honey or Maple Syrup Optional
  • 1 teaspoon Baking Powder Ensure it's fresh
  • 1/4 teaspoon Salt

How to Make Cinnamon Apple Cottage Cheese Bites
  1. Preheat your oven to 350°F (175°C) and grease or line a mini muffin pan.
  2. In a large mixing bowl, combine cottage cheese, rolled oats, applesauce (or grated apple), the large egg, cinnamon, optional sweetener, baking powder, and salt. Mix until well combined.
  3. Allow the batter to rest for 5 minutes to let the oats absorb moisture.
  4. Using a spoon or scoop, fill each muffin cup almost to the top with the batter.
  5. Place the muffin pan in the preheated oven and bake for 18-20 minutes until set and lightly golden.
  6. Let them cool in the pan for a few minutes before transferring to a wire rack.
  7. Enjoy warm or store in the fridge for later.
