  • 1/2 cup vegan butter substitute with coconut oil for a different flavor
  • 1/3 cup maple syrup can be replaced with agave syrup
  • 1 cup almond or oat milk any plant-based milk can work as a substitute
  • 1 tsp vanilla extract use pure vanilla extract for best results
  • 1 tsp baking powder ensure it is fresh for maximum rise
  • 1 tsp baking soda
  • 1 tsp cinnamon adjust the quantity to your preference
  • 1/2 tsp salt
  • 2 cups all-purpose flour use gluten-free all-purpose flour for gluten-free version
  • 1 cup rolled oats ensure they are certified gluten-free if needed
  • 1/2 cup light brown sugar a mix of granulated and brown sugar works too
For the Cinnamon Swirl
  • 1/4 cup melted vegan butter using a bit of plant-based cream adds richness
  • 1/4 cup light brown sugar can replace with coconut sugar
  • 1 tbsp cinnamon adjust as desired for more pronounced taste

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing it or lining it with parchment paper.
  3. Combine mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract in a large mixing bowl. Whisk until smooth.
  4. Mix the dry ingredients: baking powder, baking soda, cinnamon, salt, flour, and rolled oats in a separate bowl.
  5. Fold the dry mixture gently into the wet ingredients until just combined.
  6. Create the cinnamon swirl by mixing melted vegan butter, light brown sugar, and cinnamon in a small bowl.
  7. Layer the batter: pour half in first, drizzle half of the cinnamon swirl, then add the remaining batter and finish with the rest of the swirl.
  8. Bake for about 45 minutes, or until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes before transferring it to a wire rack.
  10. Optional: Mix powdered sugar, melted vegan butter, and softened cream cheese for a glaze and drizzle over cooled bread.
