How to Make Cinnamon Roll Cheesecake Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.
  5. Gradually mix the dry ingredients into the creamed mixture until just combined.
  6. In another bowl, beat the cream cheese, powdered sugar, and milk until smooth and creamy.
  7. Take tablespoon-sized portions of cookie dough, flatten, add a dollop of cheesecake filling, wrap the dough around it, and roll into a ball.
  8. Place cookie balls on the prepared baking sheet, leaving space between each. Bake for 10-12 minutes until edges are golden, and centers are soft.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
