How to Make Cinnamon Roll Cheesecake Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.
- Gradually mix the dry ingredients into the creamed mixture until just combined.
- In another bowl, beat the cream cheese, powdered sugar, and milk until smooth and creamy.
- Take tablespoon-sized portions of cookie dough, flatten, add a dollop of cheesecake filling, wrap the dough around it, and roll into a ball.
- Place cookie balls on the prepared baking sheet, leaving space between each. Bake for 10-12 minutes until edges are golden, and centers are soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
