- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash, peel, and cut the sweet potatoes into ½-inch thick wedges.
- Drizzle the wedges with olive oil and toss to coat.
- Combine sugar, cinnamon, and sea salt in a small bowl, then sprinkle over sweet potatoes.
- Spread the wedges out in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, flipping halfway through.
- Remove from the oven and drizzle maple syrup over the wedges, tossing gently.
- Return to the oven for an additional 2-3 minutes.
- Serve immediately, optionally garnishing with extra sea salt and toppings.
