How to Make Classic Chocolate Mousse
- In a large mixing bowl, combine heavy cream and vanilla extract. Beat with an electric mixer until stiff peaks form.
- Gently fold the egg yolks into the whipped cream mixture using a spatula.
- In a heatproof bowl, melt dark chocolate and unsalted butter in short bursts, stirring until silky.
- Gently mix the warm chocolate mixture into the cream mixture until fully blended.
- In a clean bowl, whip the egg whites with caster sugar until stiff peaks form.
- Carefully fold the whipped egg whites into the chocolate cream mixture.
- Pour the mousse into serving cups and allow it to set in the fridge for at least 8 hours.
- Top with dollops of crème fraiche and sprinkle with chocolate curls before serving.
