How to Make Classic Chocolate Mousse
  1. In a large mixing bowl, combine heavy cream and vanilla extract. Beat with an electric mixer until stiff peaks form.
  2. Gently fold the egg yolks into the whipped cream mixture using a spatula.
  3. In a heatproof bowl, melt dark chocolate and unsalted butter in short bursts, stirring until silky.
  4. Gently mix the warm chocolate mixture into the cream mixture until fully blended.
  5. In a clean bowl, whip the egg whites with caster sugar until stiff peaks form.
  6. Carefully fold the whipped egg whites into the chocolate cream mixture.
  7. Pour the mousse into serving cups and allow it to set in the fridge for at least 8 hours.
  8. Top with dollops of crème fraiche and sprinkle with chocolate curls before serving.
