  • 1 cup Coconut Milk full-fat or light
  • 1/4 cup Lime Juice fresh or bottled
  • 1 tablespoon Lime Zest fresh
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated fresh or powdered
  • 1 tablespoon Honey or maple syrup for vegan
  • 2 tablespoons Vegetable Oil neutral oil for sautéing
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
  • 1/2 teaspoon Red Pepper Flakes to taste
  • 1/4 cup Fresh Cilantro for garnish

Method
 

Cooking Instructions
  1. Whisk together the marinade ingredients in a medium bowl until well blended and creamy.
  2. Place the chicken breasts in the marinade, ensuring they are fully coated. Cover with plastic wrap and refrigerate for at least 30 minutes.
  3. In a large skillet, pour in vegetable oil and heat over medium-high until shimmering.
  4. Remove the chicken from the marinade and sauté for 5-6 minutes on each side until golden-brown and cooked through.
  5. Pour the reserved marinade into the skillet. Simmer gently for 2-3 minutes until slightly thickened.
  6. Return the chicken to the skillet, allowing the sauce to spoon over it generously.
  7. Plate the chicken, drizzle any remaining sauce over the top, and finish with chopped cilantro.
