- Preheat the oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat, about 5-7 minutes. Drain excess fat.
- Sauté the chopped onion and minced garlic with the beef for 2–3 minutes.
- Stir in the black beans, corn, and diced tomatoes along with chili powder, cumin, salt, and pepper. Simmer for about 5 minutes.
- Transfer mixture to a greased 9x13-inch baking dish.
- Sprinkle shredded cheddar cheese over the meat mixture.
- Prepare the cornbread mix according to package instructions, adding milk and egg. Pour over the cheese layer.
- Bake uncovered for 25–30 minutes until the cornbread is golden.
- Cool for 5 minutes before serving.
- Garnish with chopped scallions or jalapeños before serving.
