  • 0.33 cup Milk Follow package instructions for consistency.
  • 1 each Egg Check package for egg substitution options.

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat, about 5-7 minutes. Drain excess fat.
  3. Sauté the chopped onion and minced garlic with the beef for 2–3 minutes.
  4. Stir in the black beans, corn, and diced tomatoes along with chili powder, cumin, salt, and pepper. Simmer for about 5 minutes.
  5. Transfer mixture to a greased 9x13-inch baking dish.
  6. Sprinkle shredded cheddar cheese over the meat mixture.
  7. Prepare the cornbread mix according to package instructions, adding milk and egg. Pour over the cheese layer.
  8. Bake uncovered for 25–30 minutes until the cornbread is golden.
  9. Cool for 5 minutes before serving.
  10. Garnish with chopped scallions or jalapeños before serving.
