  • 2 pounds boneless, skinless chicken breasts or chicken thighs for richer flavor
For the Stuffing Layer
  • 1 box stuffing mix opt for whole grain stuffing for health
  • 1 can cream of chicken soup can be swapped for cream of mushroom
  • 1 cup sour cream Greek yogurt can be a lighter substitute
For the Vegetables
  • 16 ounces frozen mixed vegetables fresh vegetables can also be used
  • 1 teaspoon garlic powder or fresh garlic for more flavor
  • 1 teaspoon dried thyme or Italian seasoning if preferred
For the Liquid Ingredients
  • 1 cup low-sodium chicken broth vegetable broth for vegan option
For Seasoning
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Spray the inside of your crock pot with non-stick cooking spray.
  2. Place the chicken breasts in a single layer at the bottom of the crock pot.
  3. Sprinkle garlic powder, dried thyme, salt, and pepper over the chicken.
  4. Combine cream of chicken soup, sour cream, and chicken broth in a bowl; stir until smooth.
  5. Pour the creamy mixture over the chicken, then layer the frozen mixed vegetables on top.
  6. Sprinkle the stuffing mix over the vegetables and gently press down.
  7. Cover and cook on low for 6 hours.
