  4. Whisk together eggs, milk, and cottage cheese in a bowl. Stir in Italian seasoning, adjusting with more salt and pepper if desired.
  5. Fold in shredded cheese along with the cooled vegetable mixture.
  6. Grease a 9-inch pie dish, then pour in the combined mixture evenly.
  7. Bake for 40–45 minutes or until the quiche is golden brown and firm in the center.
  8. Cool for 5–10 minutes before slicing.
