Preparation
- Rinse the chicken thighs under cold water and pat them dry. Season with salt and pepper.
- Preheat your oven to 350°F (180°C).
- Cook the bacon in a large skillet until crispy, then remove it, leaving the drippings.
- Sear the chicken in the bacon drippings with butter until golden brown on both sides.
- Sauté garlic and shallots in the skillet until tender and caramelized.
- Return the chicken to the skillet, add wine, bacon, and thyme, then bake uncovered for 30 minutes.
- Allow chicken to rest for a few minutes before serving, spooning sauce over the top.
