How to Make Easy Hearty Noodle Soup
- Boil noodles: Start by bringing a pot of water to a boil. Add your chosen noodles and cook them according to the package instructions until they are tender. Drain and set aside.
- Prepare aromatics: In a mixing bowl, combine diced green onions and minced garlic. If using, add the optional sugar.
- Sauté garlic: Heat a splash of neutral oil in a pan over medium heat until it shimmers. Pour the hot oil over the garlic and green onion mixture.
- Mix soup ingredients: In the same bowl, add light soy sauce, oyster sauce, tahini or peanut butter (if using), chicken bouillon, chili oil, and milk. Stir until well combined.
- Combine noodles: Gently fold the cooked noodles into the soup mixture.
- Serve hot: Ladle the soup into bowls, garnishing with chili oil, a boiled or poached egg, and fresh green onions.
