Preparation Steps
- Season the chicken thighs with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken thighs skin-side down and cook for 5-7 minutes.
- Flip chicken and cook for another 3-4 minutes, then remove from the pan.
- Sauté sliced onions in the same skillet for about 5 minutes.
- Add minced garlic and stir for 30 seconds.
- Add thinly sliced apples, thyme, and rosemary; cook for 2-3 minutes.
- Pour in apple cider and chicken broth, scraping the bottom of the pan.
- Nestle chicken thighs back into the pan, cover, and simmer for 25-30 minutes.
- Remove chicken, stir in Dijon mustard and heavy cream, simmer until thickened.
- Return chicken to the pan to warm and serve with garnish.
