Cooking Instructions
  1. Heat olive oil in a large pot over medium-high heat until shimmering.
  2. Sauté chopped onion and minced garlic for about 5 minutes until translucent and fragrant.
  3. Add sliced carrots and diced potatoes; cook for an additional 5 minutes until they begin to soften.
  4. Stir in green beans, peas, and bell pepper; cook for 3-4 minutes until the vegetables are vibrant.
  5. Pour in vegetable broth, tomato paste, and soy sauce. Add thyme and rosemary; stir well to combine.
  6. Bring the mixture to a gentle boil, then reduce the heat to low and cover. Simmer for 30-40 minutes.
  7. Taste and adjust seasoning with salt and pepper before serving.
  8. Garnish each serving with fresh parsley and enjoy.
