Preparation
- Preheat your oven to 375°F (190°C).
- Sauté cranberries in a saucepan with olive oil over medium heat until they soften, about 5 minutes.
- Mix in honey, orange juice, cinnamon, ginger, salt, and pepper. Cook for 3-4 minutes until mixture thickens.
- Cool the cranberry mixture for a few minutes.
- Cut a pocket in each chicken breast. Stuff with brie and cooled cranberry mixture.
- Secure openings with toothpicks.
- Sear chicken in a skillet over medium-high heat for 2-3 minutes on each side.
- Combine panko breadcrumbs with melted butter. Sprinkle over chicken.
- Bake chicken for 20-25 minutes, until cooked through and golden.
- Rest chicken for 5 minutes before serving; garnish with parsley.
