For the Dressing

  • 2 tablespoons Honey Maple syrup can be used as a vegan substitute.
  • 1 teaspoon Dijon Mustard Yellow mustard is a milder alternative.
  • to taste Ground Black Pepper
  • 1/4 cup Extra Virgin Olive Oil Avocado oil is a good alternative.

Method
 

Steps
  1. In a large bowl, mix together the mixed salad greens, dried cranberries, crumbled feta, and toasted walnut pieces.
  2. In a small mixing bowl, whisk together the balsamic vinegar, honey, Dijon mustard, and ground black pepper.
  3. Gradually drizzle in the extra virgin olive oil while whisking continuously.
  4. Pour the dressing over the salad mix and toss gently to coat.
  5. Serve immediately for the best texture, or chill for up to 30 minutes.
